Hyatt Regency Yogyakarta has held another Wine Pairing Dinner, following the success of the previous dinner this year. This time, the dinner paired vintages from Hatten Wines and Two Islands Wines with a selection of grilled and roasted dishes. The event, called The Story Behind the Grill with James Kaleskee, introduced Bali’s Hatten and Two Islands wines.
James Kaleskee, originally from South Australia, earned his bachelor of science in viticulture and oenology from Curtin University. Kaleskee Wines has earned a five-star rating in the James Halliday winery ratings and James Kaleskee has worked with four of Australia’s greatest and most renowned winemakers: Bob Cartwright, Cliff Royle, Vanya Cullen and Virginia Wilcock.
The dinner was held near the Hyatt Regency Yogyakarta golf course, amidst the lush gardens. Executive chef Wayan Durma and his talented culinary team showcased a mouth-watering set menu of Grilled Vegetables in a Beef Pepper Cup, Artisan Cream Tomato with Organic Grilled Sourdough, Homemade Grilled Gnocchi with Fish on Banana Leaf, and Grilled Banana with Yellow Skin, served with Chocolate Fondue.
All of the dishes were paired with Hatten and Two Islands wines: Hatten Alexandria, Hatten Rose, Two Islands Pinot Grigio and Two Islands Cabernet Merlot made from local Alphonse-Lavallé dark-skinned grapes, French table grapes and local white wine Belgium and Probolinggo grapes.
